~ 1 can chopped spinach, drained
~ 1/2 cup sour cream
~ 1/2 cup mayonnaise or Miracle Whip
~ 1/2 cup bacon bits
~ 1 package of dry ranch dressing
~ 2 or 3 green onions, chopped
~ soft tortilla shells
* Note: If the mixture seems too dry, I add more sour cream and mayonnaise. I add the bacon bits without measuring, and I usually omit the green onions.
Mix all of the ingredients.
Spread on the tortilla shells.
Roll the shells.
Refrigerate for a couple hours.
Cut into bite-size sections before serving.
This is one of those recipes that you'll either love or hate; there usually isn't a middle ground. I don't like spinach, but I love these rolls. Sean doesn't like spinach, and he doesn't like the rolls at all. Either way, these appetizers will leave a lasting impression on your taste buds.
