I’ve mentioned previously that Sean and I cook brinner (breakfast food for the evening meal) on Sundays. I always make the same things: sausage or bacon and cheese with scrambled eggs. A couple Sundays ago, Sean decided to take the pancakes in a different direction. Using the Yummly app on his phone, he discovered a recipe for johnnycakes. They are not healthy, but good grief, they are delicious! Click here for the original recipe or continue to see the recipe and how we tweaked it.
~ 1 cup cornmeal (We used two cups to thicken the consistency.)
~ 1 tablespoon margarine
~ 1 tablespoon sugar (We added a tablespoon for a total of two.)
~ 1 teaspoon salt (We omitted the salt because we used self-rising cornmeal.)
~ 1 cup boiling water
~1/4 cup milk
~ Bacon drippings
In a small bowl, mix (by hand) cornmeal, margarine, and sugar.
Pour boiling water over ingredients; stir.
Add milk, and stir until mixture is thicker than pancake batter.
Pour bacon drippings on a hot griddle or skillet. (It’s easier to use a griddle.)
Spoon the batter on the drippings.
Cook until both sides reach desired crispness.
This is a super yummy recipe. I felt like an old-time pioneer eating these johnnycakes! Enjoy; but for the sake of your health, don’t make them too often.
