Summer vacation means experimenting with new recipes. I search Pinterest, pinning all sorts of delicious looking recipes at which to try my hand. But, regardless of how many recipes I pin, I always return to a tried and true favorite: Crock Pot Chicken and Stuffing. Just ask my husband. He asks, “What’s for dinner?” To which I reply, “Crock Pot Chicken.” When he asks about all the other recipes I pinned and for which I bought ingredients, I simply shrug and say, “I decided to do Crock Pot Chicken.” Truth is, it’s a simple, delicious, go-to recipes for days when you’d rather not get crafty in the kitchen. That’s usually once a week for me.

Ingredients:
~ 4 chicken breasts (I use tenderloins, so I increase the number to six.)
~ 1 package of Stove Top Stuffing (I prefer the chicken flavor.)
~ ½ cup of sour cream
~ 1 can of cream of chicken soup
Directions:
Arrange chicken in the crock pot.
Layer dry stuffing mix over the chicken.
Mix sour cream and soup and pour over the stuffing.
Cook on low for 2-4 hours. (Time will vary. I have a high-powered crock pot, so two hours for tenderloins is long enough. Check occasionally to monitor time.)
Fluff and serve.
I generally serve with a side of mashed potatoes and green beans, but a side salad would also compliment the dish. I hope you enjoy this easy-breezy recipe!
