Today’s post for Recipe Friday is a go-to comfort food: Campbell’s Classic Family Meatloaf. The original recipe can be found here. However, I always tweak it. My version is listed below.
~ 1 can of tomato soup
~ 1 to 1 ½ pounds of ground beef
~ 1 cup of Italian bread crumbs
~ 1 tablespoon of Worcestershire sauce
~ 1 tablespoon of Extra Spicy Mrs. Dash
~ 1 egg, beaten
~ ¼ cup of water
~ Ketchup, hot sauce, and Extra Spicy Mrs. Dash – I don’t measure. I squirt ketchup in a mixing bowl until it looks like I have enough to cover my loaf (think frosting a cake). Then, I add several dashes of hot sauce and Extra Spicy Mrs. Dash. Stir until the three ingredients are well blended.
Preheat oven to 350 degrees.
Mix all loaf ingredients thoroughly.
In a greased baking dish, shape mixture into a loaf. Most of the time, I use a round dish, so I round my loaf.
Bake for 50-55 minutes, then remove from the oven.
“Frost” the loaf with the sauce.
Bake for fifteen minutes.
I usually serve this with mashed potatoes or homemade macaroni and cheese (look for my mac and cheese recipe in the next Recipe Friday), green beans, and dinner rolls.
