It’s the first Recipe Friday of 2015! Today, I’m going to share a recipe for Crab Stuffed Shells. I used the recipe for Mac ‘N Cheesy Chicken Stuffed Shells that can be found here: http://www.loosefromthezoo.com/2013/03/mac-n-cheesy-chicken-stuffed-shells.html?m=1 (a delicious, easy recipe) and tweaked it.
~ 12 oz. box of jumbo shells – If you can find a 6 oz. package of shells, that will work better because I only used half the box.
~ 8 oz. brick of cream cheese, softened
~ 8 oz. package of crab, chopped in a processor – I used imitation crab, but fresh could be substituted.
~ 1 package of dry Italian seasoning
~ ½ cup sour cream
~ 1 ½ jars of alfredo sauce – I used one 14.5 oz. jar and half of another.
~ shredded mozzarella cheese
Preheat oven to 350 degrees. Prepare the shells according to package directions. Drain.
Mix cream cheese, crab, dry Italian seasoning, and sour cream in a bowl. The mixture should be thick enough for you to scoop with your hands or a spoon. Stuff each shell with mixture and place in a casserole dish.
Pour sauce over shells and bake for 15 minutes. Remove from oven, top generously with mozzarella cheese, and bake for another 5-10 minutes.
Serve with Caesar salad and garlic bread for a complete meal. Enjoy!
