It never fails; every year Sean and I purchase too much candy to hand out on Halloween. That's why we always buy candy we like so we can enjoy the leftovers. However, since we had NO trick-or-treaters this year, we ended up with more candy than we could eat. What to do with all that yummy goodness? Why, make a cheesecake, of course!
I used mini Milky Way, Three Musketeers, Snickers, and Twix. Here is my recipe:
~ 1 - 8 oz. block of cream cheese, softened
~ 1 - 4 oz. container of plain Greek yogurt
~ several mini pieces of candy, chopped finely (I honestly don't know how many I used, but most of it was Milky Way and Three Musketeers. I only had one each Snickers and Twix. Maybe 20-30 pieces total.)
~ 1 container of Cool Whip
~ Oreo pie crust
With a mixer, blend cream cheese and yogurt until smooth.
Stir in chopped candy bits and container of Cool Whip until well blended.
Spoon into Oreo pie crust.
Chill for at least two hours before serving.
I served mine with caramel sundae topping. I shared it with my mother and co-workers; it barely lasted a day. I must admit, it was scrumptious! Let me know if you try it or a variation of the recipe.
